Pheasant Bacon Burgers

Ingredients:
Breasts -2 Pheasants, 1/2 medium onion -coarsely chopped, 1 large egg, 1/2 packet Lipton Savory herb with garlic mix, 1 cup crushed saltine crackers, maple favored bacon - thick sliced the best.
Directions:
De-bone breasts from 2 pheasants. Grind pheasant, onion, & egg in food processor. In mixing bowl combine seasoning & crackers with ground meat, mix thoroughly. Form into 1/3-1/4 lb patties, wrap with 1 strip of thick sliced maple bacon. Pan fry approx 5-7 mins on each side over medium heat, no need to add oil, bacon provides enough. Serve on toasted bun. Top off with your favorite topping, dijon mustard, mayo, cheese, etc. Our kids love pheasant now! As well, can freeze patties for future use.
